A very popular Chinese green tea with a fresh, grassy flavour and gentle tart edge. This is the tea you are most likely to encounter in the streets of Hong Kong, and it is a great all round Chinese green. Chun Mee was originally produced in the Chinese Jiangxi province but is now produced throughout China and Taiwan (where this particular Formosa variety comes from).
Chun Mee is steamed rather than pan fried to halt the oxidisation process. The budding leaves are then hand rolled into thin needle shapes with a slight curve (leading some to call it "eyebrow tea").
